Bell Pepper Egg-in-a-hole
The first thing that people notice about me is that I am very easily influenced. If someone tells me anything about their beliefs, views, pets, I will believe what they say and probably side with them. If I were on a debate team, I would be on the other side before we even started.
So obviously watching a documentary about becoming how animals are treated in slaughterhouses put me over the edge. Do I become a vegetarian again? Right before *gasp* Christmas?
In the meanwhile, I may just be living off eggs and cheese in a way to transition. Sadly there is no way I could be a vegan. I wish I could, but my love of cheese is something I don't think I could ever kick.
And what a perfect way to start than with this simple breakfast! It's fun to make, and delicious.
What you'll need:
-1 teaspoon olive oil
-1 bell pepper (any color)
-1 tomato
-1 egg
+salt and pepper to taste
Direction:
1. In a medium skillet, heat the olive oil. Cut the tomato into thin slices. Place a slice of tomato on the skillet. Slice the bell pepper into a 1/2 inch thick ring. Place the ring around the tomato, then crack the egg into the middle of the pepper ring.
2. Season with salt and peppers and cook until the egg whites are set, around 4-5 minutes. Remove from heat and enjoy.

ReplyDeleteI could never give up cheese either...but being a vegetarian really isn't that hard! Especially with healthy delicious (easy) meals like this!

ReplyDeleteWhat a great idea to do the egg in that pepper ring! I was vegetarian for a year while trying to work through some stomach issues, it was not nearly as hard as I expected. Good luck!

I feel like that sometimes too! However, when I eat meat and think about the circle of life, etc...I just stop thinking about slaughterhouse conditions.
