Last exam today! Then I'm free! Free to enjoy this holiday season. I literally didn't study for this exam. I'm not worried though. I got 100% on the midterm. One of the reasons was because I WROTE one of the questions. Literally, word for word, that was the very same question that I suggested to my professor would be good for a high school math problem (because this professor also goes to high schools with me and other students to teach them math)
Now to get me in the Christmas spirit, I tried to make red and white cookies. Maybe I should have added more cranberries or white chocolate because it doesn't look too obvious that it's Christmas-y. But it's everything good about these holidays around this time. Pumpkin, cranberries, white chocolate, and oatmeal. (You know, for the cold mornings)
And as an added bonus, my brother is coming home on Monday! What a Christmas! I haven't seen him for 2 years, because he was at the University of Toronto getting his masters. This is why I'm lucky to have an older brother. I didn't need to buy many of my math books because he took pretty much the same courses as me in university. But he hated pure math, so he was glad to be rid of them.
So when he gets home, I will be sure to have a pot of tea ready and some of these delicious. pillow-like cookies ready for him.
Ingredients:
-1 1/2 cups butter, softened
-2 cups brown sugar
-1/2 cup white sugar
-1 3/4 cup pumpkin puree
-1 egg
-1 teaspoon vanilla extract
-2 cups all-purpose flour
-2 cups whole wheat flour
-2 cups oats
-2 teaspoons ground cinnamon
-2 teaspoons baking powder
-1 teaspoon salt
-1 1/2 cups white chocolate
-1 cup dried cranberries
Directions:
1. Preheat the oven to 375˚F.
2. In a large bowl, cream together the butter and sugars until light and fluffy. Add the pumpkin, egg and vanilla and beat until smooth.
3. In a separate bowl, mix together the flours, oats, cinnamon, baking powder and salt. Slowly mix in the dry ingredients to the wet ingredients until fully incorporated.
4. Fold in the chocolate chips and cranberries.
5. Drop 1-2 tablespoons of batter for each cookie onto a baking sheet.
6. Bake for 20-25 minutes, or until the edges are lightly browned.
